7.PROCESSING OF IMLI CANDY FROM TAMARINDUS INDICA FRUITS
Abstract
Tamarind fruits are one of the most important non-wood forest products of the Bastar district. In Asia, Bastar is the largest exporter of the tamarind fruits. It is one of the major revenue generating forest produce with respect to the tribal’s. Tamarind fruits are full of acidic in nature which combines well with sugar, chillies, and other flavours; hence its pulp is used to prepare a variety of traditional refreshing and highly energetic drinks. In Bastar tribal’s use to make sweet balls of the tamarind coated with sugar called as “Imli candy”. The processing of Imli candy from the tamarind fruits are discussed in this paper.
