Abstract

Food safety is a serious global concern, especially for foods of animal origin, which are more likely to be contaminated by harmful microbes, toxins, and chemical residues. As food production and global trade have expanded, the chances of unsafe substances entering the food chain have also increased, putting human health at risk and causing major economic losses. Traditional methods used to detect food hazards are dependable but often slow, complex, and require well-equipped laboratories and trained experts. To overcome these challenges, faster and smarter technologies have been developed, with biosensors emerging as a promising solution. Biosensors use natural biological components to quickly and accurately detect harmful substances, often in real time and directly at the site of testing. Because they are sensitive, reliable, and easy to use, biosensors offer a practical and innovative approach to safeguarding foods of animal origin and strengthening food safety across the entire supply chain.
