Abstract

This study objective is to evaluate the bioactive components that were detected in Ziziphus spina-christi fruit pulp and how they might be used in different food and pharmaceutical products. To explore their potential for development as a functional food, analyses using GC-MS and HPLC were conducted to identify the phytochemical content of fruit pulp. The GC-MS chromatogram identified compounds such as 13-docosenamide (Z) (29.58%), hexadecanoic acid (4.99%), (9E, 12E)-9, 12-octadecadienoyl chloride (2.73%), prostaglandin A1-biotin (4.36%), cis-vaccenic acid (0.57%), guanosine (0.54%), mannose (0.54%), and flavone 4’-OH, 5-OH, 7-di-O-glucoside (1.84%). The HPLC analysis showed that cinnamic acid (23.19%) was the predominant compound, followed by syringic acid (22.03%), gallic acid (17.77%), chlorogenic acid (9.11%), naringenin (8.98%), and catechin (2.21%). These findings indicate that the fruit pulp of Ziziphus spina-christi contains a variety of bioactive compounds with potential medicinal properties, suggesting significant potential for its development as a functional food.
